You might like to check out Videora to convert vids to MP4 format for
the iPOD.

A couple of tips.

- Invest in a hardcase to protect the iPOD. Its well worth the dosh.
- Make sure youve upgraded to the latest version of s/w on the pod,
because v1.1 has this annoying habit of stopping vids at 32 seconds
exactly.

iTunes is ideal, as its also around to transfer your music collection
to the iPOD afterwards.

Has the info you need. Rip using EAC (Exact Audio Copy) and encode to
mp3 using lame --alt-preset-standard

If you follow this approach all your metadata will be correct too.
