Our problem is that the first time we had goose, about 20 years ago, we bought
it from an excellent butcher in the NW, who hung it for us so it was very
gamey, and the most delicious bird weve ever had - birds since have never
lived up to that first one.


This year Vicky has come back from Uni and, for the first time *ever*, has
been helping in the kitchen! plus Ross & Mike are slightly less un-helpfull
this year as well!
